It's Really Good That I Like to Lick the Batter Bowl

It's really good that I like to lick the batter bowl. Just one of the "real life" things happening in my world!

I decided that since I had all the ingredients I would make Carol's Lemon-Raspberry Muffins. It would be so nice to freeze them (well, most of them) and have them good to go to the cottage for Memorial Weekend. (Yes, I thought of making them with blueberries too, to go with the weekend color theme but I decided not to get that cute.)

I copied Carol's recipe carefully. (I thought.) And then went to the kitchen adding in all the ingredients on my list -- eggs, milk, lemon zest and juice, vanilla, flour, baking soda, salt and raspberries.

See anything lacking on that list?

I put them in my cute little muffin papers and popped them in the oven, and then went to clean the bowl. Of course I had to taste a bit of the batter.

I should have done it sooner. Let's just say it did not taste good. (Let me also say at this point that this was not Carol's fault!)

I quickly ran to check the original and sure enough, I left out the three-quarters cup of sugar. So I pulled them from the oven and rapidly scooped the muffin batter from the papers back into the bowl (with only one real accident!) This is messy work. Then I added the sugar, got new papers and back to it.

The end result is lovely. They're pretty with their red berries showing through.

And yes, they are delicious!

And so far, we still have some to take up north.

I usually say to myself, when I mess up,
“keeping it real huh!”
I am impressed, you caught the sugar omit in time
and set out to make the error great!
The muffins look yummy, with the
pink/red peeking out to say hello.
I might just try this recipe too.
Reminder . . . sugar, sugar, sugar!

It's a good thing you managed to save the muffins before they baked. I think I too have forgotten the sugar once or twice. I do love your plates and your tablecloth or runner to match. Beautiful.

Good for you for catching that missing sugar just in the nick of time.

You averted disaster which is a experience I've had with a baked product. Oh the waste when I forget to add sugar and hated my treat. Love your cupcake liners - so cute. I hope you are enjoying the cottage and look forward to photos of it.

Glad you could save them. And, yes, it's a good thing you like to lick the bowl. I do too actually.

It's an omission I would never have caught as I have never licked the bowl since "salmonellagate" with Edwina Curry. Glad you managed to save them. I have those cake cases too, but they just sit here as I never bake little cakes or muffins now. I would love these.

Glad you noticed the missing sugar in time - the muffins look great! Have a sweet week, hugs, Valerie.
By the way, 'somebody' once put salt in her muffins instead of sugar, I'm not naming her!

Aww, well done for saving the muffins before they were baked. Although, if it happens again and the muffins are already baked, you can use sugary syrup to soak them with, add a bit of whipped cream on top and some fruits and you can make a sort of Savarin.
They look amazing!

Oh, I was expecting to say you made a trifle in the end - well recovered!

Hello,
They look delicious Jeanie! I am glad you tasted the batter, my hubby is my taste tester.
Take care, have a happy day and a great week ahead.

I've had the experience of omitting an ingredient, but never sugar. I can attest to the fact that leaving out the baking powder isn't exactly useful.

Classically, one might say, "All's well that ends well". And so it did.

Accidents happen! At least you caught it in time so your efforts were not wasted. Next time you bake, you will probably triple check your ingredients. I do know what these mishaps are like!

I remember making muffins in home economics that didn't have any sugar. They were kind of different for sure and the experience has stayed with me some 60 years later.

Jeanie, that sounds sooo much like something I would do (and have done!)... I'm glad you added this post to tonight's Share Your Style so I can feature your post next week for you! <3

Will have to bake up a batch of Carols and your muffins for next week breakfasts! My sister-in-law and mother-in-law will be arriving sometime next Monday driving in from California to stay for a week or so. Looking forward to nice breakfasts with them. :)

Enjoy your treats!
