Quiche-a-licious

Back some time ago, I mentioned the delicious quiche I cobbled together from a couple of different recipes. So many were interested I promised to post what I did so here goes!

 

First, I cheated. I used a store pie crust. It was delicious but I'm sure if you do home made, it would be even better! Bake10 minutes in a 375 degree oven.

In a skillet, sautee until spinach is wilted and mushrooms/shallot are softened.

About four or so cups of fresh spinach, ribs removed and roughly chopped (unless you are using baby spinach -- no need to chop

1 shallot or a small onion

1 8 oz. package of sliced mushrooms (I use Portobello). You can lightly chop overly large mushroom.

While it is cooking, combine...

4 eggs (I used XL but L should be OK)

3/4 c. milk 

8 or so oz. of Grueyere or Swiss cheese (Gruyere would be better but I had Swiss so I used it and it was fine) -- Save about 1/4 c. to sprinkle on top

About 4-6 oz. Feta cheese. I used block feta and crumbled but pre-crumbled is probably fine

A dash of nutmeg, and salt and pepper.

Put the filling mixture in the bottom of the blind-baked pie crust and add the liquid mixture on the top. Top with the remaining Grueyre.

Bake about 40 minutes or until a toothpick or skewer comes out clean. Allow to cool for a few minutes before serving so it sets well.

 

Serve with fruit, potatoes, a delicious muffin or toast.

oooh Jeanie, that looks delicious, I love Quiche. I will be making one for our summer WI meeting next month, I usually make my own pastry but I might cheat and use Jus-rol!!

That does look wonderful. When I lived in the US I sometimes made quiche (with store bought crust). I don’t have an oven here, so I haven’t had quiche in years.

Yummy - It looks and sounds perfect! I love throwing together quiches from leftovers and always keep some store bough crusts in the freezer for those quick and easy meals - crustless is good too. I will sometimes add some leftover cubed bread or some kind of taters when I go crustless. It's one of those anything goes kind of meals. Thanks for sharing your recipe. :)

Such a good looking quiche, Jeanie I love all the ingredients in there. Down the street from where I grew up, there was a small cafe, and they serve the best quiches - I always got the asparagus quiche, and Oh, it was so good. The cafe is still there, and I really miss it. Your quiche looks wonderful, and I like that pretty blue plate you served it on. This is a nice Summer meal.

Looks so good, Jeanie. Since giving up dairy, quiche is something I miss a lot. I have so many recipe variations too. Sure hope it tastes as good as it looks!

Yum! I have never thought about using a different cheese than Swiss, but I think you are right Gruyere would be good. Plus Feta, that wouldn't even have come on my radar. I have always used the same recipe and never explored something new, but now I am going to try this out. No baking this week though. It's too hot to turn the oven on. Thanks for posting this.

Oh yum, I love quiche. I make a crustless quiche. LIBERALLY butter the pan. Shake in bread crumbs. Assemble as usual.

Jeanie, I don't call it cheating when I use a "short-cut" when I'm in a crunch. And, as much as I bake and cook I have never made a crust that measures up so store bough is fine with me. Your recipe sounds delicious. Have a lovely weekend.......
