Making Rosettes with Betty

Remember that big snow from this post? Well, those photos were taken a couple days after the big snow when the roads were plowed and the sky was blue. But on that very day, after the first 10 inches or so, Rick and I went out to a wonderful dinner!  And we got to help!


We met Doug and Betty on New Year's Eve and they invited us all to a winter dinner. Oh, so good with white chicken chili and salad, bread, wine and dessert. And we were going to help make the dessert!

When Betty came to New Year's she brought a tray of beautiful rosette pastries (below) and we were all wanting to learn how to make these crunchy cookies. So, Betty taught us! This may be old news to some of you, but join us in the kitchen.


First, you heat the oil to 350 --


-- and keep an eye on the temperature with the candy thermometer. You don't want it too hot -- or too cold. Just like Mama Bear.


Then you mix up this batter...


...and get out this handy thing! (Which, I am told, is available at World Market and probably a zillion other places including Amazon.)


So, you take the rosette iron...


...and dip it in the oil, empty. Then dip it in your batter. Not all the way, just up to the top.


Then you put it in the hot oil.


In a very short time it will loosen up and help it off the iron with a chopstick, like Kate is doing here.


Then let it stay in the oil till it's the desired amount of brown-ness for you. Mark liked his a little darker.


All this you do with an eager and very interested audience!


Well, not everyone is that interested.


After you remove them from the oil, place on paper towels to drain grease and dry a bit.


The sprinkle with powdered sugar -- perfect for our snowy night!


And serve! The rest of Betty's dessert included a delicious slice of grilled pineapple and ice cream.


There was another part of the evening that was special to me. Betty's cat, Max.


Max bears a more than striking relationship with the late, great Stimpy. That's Stimpy on the left and Max on the right. I can't even put their photos in the same file because I'm not sure I could tell them apart, save for the background!

 

Stimpy was my first cat-boy and a wonderful animal. And, if you remember my Valentine post, Stimpy is responsible for my meeting Rick!


I'm convinced of the nine lives theory (even the timing worked out!). Happy to see my boy again, in new form and with a wonderful home.

It was a night to remember! Thanks, Betty and Doug!

  1. That is an incredible process! You really need to know what you are doing. I came across a set of 'tools' and I didn't know what they were but someone told me they are for making these! I wouldn't try to do this on my own though...well, never say never! heehee! Hugs!

  2. What a wonderful evening. I've never seen the iron rosette and so it was great seeing how these beautiful desserts are made. The cat sure does look like Stimpy. I'm sure that gave you a momentary jolt. I hadn't realized (or didn't remember) that Stimpy is responsible for your meeting Rick. How cool is that?!

  3. The rosettes kind of look like pretty funnel cakes. I LOVE funnel cakes, so I'm sure the rosettes are awesome.

    Max is a very handsome boy, and so was Stimpy. I'm a sucker for orange tabbies too. I hope you're right about the nine lives. I'd like to think of my Milo getting another, better chance.

  5. As far as I know those rosettes are a real Mennonite item. My wife is a Mennonite girl and some of her relatives are still conservative(ish) Mennonites and the wife of her eldest brother always makes these and brings them to every family reunion.

  7. Sweet Stimpy! I have thought a few times that I would love one of those rosette makers, but then I think I probably would not use it enough. I sure do love them!! I have not made chicken chili this year yet. I need to. It's so yummy!!

  8. I have always wondered how to make these rosettes and so I enjoyed this post a lot. I would like to try out so I guess I better get myself one of those rosette makers. :) It's always fun to go out with new friends as well as meeting new people, and if you get to see one of your old pets in their new life, even better. happy rest of your weekend.   9. Thanks so much for showing us the process. I don't think I could manage it--I'm a terrible baker. I had an aunt, who would make tons of these at Christmas, and deliver them to all of us in gift boxes with layers of tissue. Yummy...

  13. I have one of those sets of irons, but have only made them once. I didn't use a chopstick, so that was a great bit of advice. Your time with Betty and the rosettes was fun to watch and learn about. What a great post.

    And of course, Max was a joy to see and YES, he really does look like Stimpy, right down to all his markings.

  14. Those little rose pastries are beautiful! They remind me the way we used to try to make homemade donuts but ours were not pretty at all. I just love that you made new friends like that. :)

  15. Struva! They're called Struva in Swedish. I used to help my grandmother make them at Christmas time -- they were delicious, and quite a treat. Somewhere along the line her irons disappeared. My mother got them after she died, but I suppose since Mom never made them, she got rid of them when she made her big move from Iowa to Kansas City. That's ok with me, since they're more trouble than I'd indulge in now -- but I'd be happy to eat some!

  16. Mmmmm - they look divine! I love those kinds of fried cookie/cake/pastry sort of desserts. A dear friend's Italian mother used to make something that looked similar, but was much much thinner, I believe called Pizzelles (or something spelled sort of like that LOL). Also served with powder sugar and ice cream!

    I like the way you spend snowy evenings!

  32. I remember my Mom making those around Christmas time many moons ago and how we all loved those crunchy wafers.
    What a nice cooking lesson you all got.

  33. Ooh they look delicious! I would probably need help if I wanted to attempt making those, because I'm almost positive I would mess it up somehow, haha. It looks like fun though and the final product looks delicious. My grandma used to make those years ago. 😊 I'm glad you had a fun evening together! We had the same snow here, it was crazy. I got stuck trying to drive off of my street and my fiance had to help me get the car out of the snow pile. I'm counting down the days until spring! 😊

  37. I can't get over how much Max looks like Stimpy! That is just crazy! I can see how you need to save their photos in different files as it would be hard to tell them apart!

    Those rosettes look beautiful and I bet they were so delicious! Especially with some grilled pineapple and ice cream. Yum! I love the picture of the guys all in the dining room while the ladies are at work in the kitchen!! :) That's totally how it is on my dad's side of the family as the men aren't really into cooking and prefer to chat while the ladies work their magic in the kitchen (although I know that Rick is talented in the kitchen!).

  38. Wow, those rosettes are amazing Jeanie. I have to say looking at the process my mouth started to water. I can only imagine how good they are. I won't say this is an easy recipe but the finished product is well worth the effort. My goodness, I can't get over the resemblance of Max and your Stimpy. I know this did your heart good to see Max, so sweet. Now, I'm off to read the post of how Stimpy brought you and Rick together, I either missed that post or forgot........Happy week :)

  40. They not only taste delicious, they are beautiful. I love them. I've never even THOUGHT of making them...no telling what kind of mess I could make. And, I absolutely LOOOVE grilled pineapple.

  44. Ooo...those look sooo GOOD! Are they a bit like funnel cakes? At first I thought they were like those Italian crisp cookies pizzelles, I think they're called?? Whatever they are I wouldn't mind one with my cup of tea right now! ;) How CUTE is Max!! He and Stimpy could have been cousins! Cats... no one naps like a cat.   49. I don't think I have left a comment on this post; but first how lovely to get to say hello to your reincarnated Stimpy. Oh Rosettes! My cousin makes them every year for Christmas and gave me a rosette maker, but I just ended up making a mess. I needed your pictures and didn't know about the chopstick, that would have helped. I finally got rid of that rosette maker. Sad! I will just enjoy your pictures.

  51. These rosettes looks so yummy! And also not diet, so not for me right now :(
    I have to control myself little bit more, because of my heart problems. I should stay with the weigh I reached recently. After my pregnancy I had to loose my weigh and I think it's ok at the moment.

    Max is adorable :)
    Unfortunately I don't believe in 9 lives :( It's really hard to get used to losing beloved cat, but I know that he/she will never come back. Of course we can meet a lot of cute and adorable cats, but we'll never meet the same we lost :( But I believe that there is something like a heaven and one day we'll meet together and stay forever <3
