It's really good that I like to lick the batter bowl. Just one of the "real life" things happening in my world!
I decided that since I had all the ingredients I would make Carol's Lemon-Raspberry Muffins. It would be so nice to freeze them (well, most of them) and have them good to go to the cottage for Memorial Weekend. (Yes, I thought of making them with blueberries too, to go with the weekend color theme but I decided not to get that cute.)
I copied Carol's recipe carefully. (I thought.) And then went to the kitchen adding in all the ingredients on my list -- eggs, milk, lemon zest and juice, vanilla, flour, baking soda, salt and raspberries.
See anything lacking on that list?
I put them in my cute little muffin papers and popped them in the oven, and then went to clean the bowl. Of course I had to taste a bit of the batter.
I should have done it sooner. Let's just say it did not taste good. (Let me also say at this point that this was not Carol's fault!)
I quickly ran to check the original and sure enough, I left out the three-quarters cup of sugar. So I pulled them from the oven and rapidly scooped the muffin batter from the papers back into the bowl (with only one real accident!) This is messy work. Then I added the sugar, got new papers and back to it.
The end result is lovely. They're pretty with their red berries showing through.
And yes, they are delicious!
And so far, we still have some to take up north.

ReplyDeleteIt's an omission I would never have caught as I have never licked the bowl since "salmonellagate" with Edwina Curry. Glad you managed to save them. I have those cake cases too, but they just sit here as I never bake little cakes or muffins now. I would love these.

Aww, well done for saving the muffins before they were baked. Although, if it happens again and the muffins are already baked, you can use sugary syrup to soak them with, add a bit of whipped cream on top and some fruits and you can make a sort of Savarin.

I've had the experience of omitting an ingredient, but never sugar. I can attest to the fact that leaving out the baking powder isn't exactly useful.

ReplyDeleteI remember making muffins in home economics that didn't have any sugar. They were kind of different for sure and the experience has stayed with me some 60 years later.
